Sweet Potato & Black Bean Burger Patty

Smoky with a little bit of sweet, these quick and easy burgers are a delicious vegetarian option.

Sweet potato, peeled and chopped into small pieces

Canned black beans, drained
1 x 400 gram tin
Brown rice, uncooked

Spring onions, finely diced

Wholemeal rolls, sliced in half

Method
Preheat oven to 190oC and line a baking tray with baking paper.
Cook the rice according to the packet instructions. Once rice has stopped steaming, refrigerate it until it’s fully cooled or ready to use.
Put the sweet potatoes in a steamer and place on top of a saucepan of water on medium heat. Steam for 15 to 20 minutes until the potatoes are cooked through. Remove from heat and mash. Refrigerate until cooled or ready to use.
Place ½ of the black beans into a bowl and mash. Add the remaining black beans, sweet potato, spring onion, 1 cup cooked rice, flour and spices. Add salt and pepper to taste. Mix well to combine.
If the mixture is too wet, add more rice until the mixture holds together. With damp hands form the mixture into 6 even sized burgers and place on the lined tray.
Place into the oven and bake for 20 minutes. Remove from the oven and turn burgers over. Bake for another 10 to 15 minutes until golden brown.
Serve in a warm toasted roll or any bread of your liking with salad of your choice.
Try the following salad ingredients: lettuce, grated carrot, beetroot, tomato, pineapple, cucumber, capsicum or red onion.
