Sweet Potato & Black Bean Burger Patty

  • Mashed sweet potato (approx. 2 sweet potatoes)
  • 2 cups
  • Cooked (or canned) black beans
  • 1 cup
  • Cooked brown rice
  • 1 ½ cups
  • Spring onions, finely diced
  • ½ cup
  • Wholemeal plain flour
  • ½ cup
  • Ground cumin
  • 2 ½ tsp.
  • Smoked paprika
  • 1 tsp.
  • Salt
  • 1/4 tsp.
  • Pepper, to taste
  • A pinch

Method

  1. Preheat oven to 190oC and line a baking tray with baking paper.
  2. Place black beans into a large bowl and mash half of them. Add the sweet potato, 1 cup of the cooked rice, spring onion, flour and spices. Mix to combine. Adjust seasoning if needed.
  3. If the mixture is too wet, add extra rice. It should be moist but firm enough to form burgers.
  4. Line a ½ cup measure with gladwrap. Fill with burger mixture, packing firmly. Lift out and transfer to the lined tray, pressing down gently to form the burger.
  5. Place the burgers in the oven and bake for 20 minutes, then flip and bake for another 10-15 minutes.
  6. Serve in a warm toasted roll or any bread of your liking with salad of your choice.
