Savoury Rice

A quick and easy pork and veggie-packed rice dish.

- White rice, uncooked
- 2 1/2 cups
- Carrots, peeled and diced
- 3 medium
- Celery, diced
- 3 stalks
- Frozen peas
- 3/4 cup
- Onion, diced
- 1 medium
- Frozen corn
- 3/4 cup
- Pork mince
- 500 grams
- Olive oil
- 3 tablespoons
- Garlic, peeled and finely diced
- 1 clove
- Salt reduced chicken stock powder
- 2 teaspoons
- Salt reduced soy sauce
- 1/4 cup
- Pepper
- to taste
Method
- Cook the rice according to the packet instructions. Refrigerate rice until cooled or ready to use.
- Put a frypan over medium heat and add the oil. Add the onion and garlic and cook for a minute or two, until the onion starts to look transparent.
- Add the pork mince and cook until evenly browned, mixing and breaking up any lumps that form with your spoon.
- Add the remaining vegetables and stock powder and cook until they start to slightly soften.
- Add the rice to the pan.
- Add the soy sauce and pepper to taste and mix well to combine.
