A quick and easy pork and veggie-packed rice dish.

White rice, uncooked
2 1/2 cups
Carrots, peeled and diced
3 medium
Celery, diced
3 stalks
Frozen peas
3/4 cup
Onion, diced
1 medium
Frozen corn
3/4 cup
Pork mince
500 grams
Olive oil
3 tablespoons
Garlic, peeled and finely diced
1 clove
Salt reduced chicken stock powder
2 teaspoons
Salt reduced soy sauce
1/4 cup
Pepper
to taste
Method
Cook the rice according to the packet instructions. Refrigerate rice until cooled or ready to use.
Put a frypan over medium heat and add the oil. Add the onion and garlic and cook for a minute or two, until the onion starts to look transparent.
Add the pork mince and cook until evenly browned, mixing and breaking up any lumps that form with your spoon.
Add the remaining vegetables and stock powder and cook until they start to slightly soften.
Add the rice to the pan.
Add the soy sauce and pepper to taste and mix well to combine.
Serves: 10
