Crispy Veg Fritters


Crispy and healthy veggie fritters for the perfect side or snack.

  • Grated zucchini
  • 1 ½ cups
  • Grated carrot
  • 1 cup
  • Cauliflower, finely chopped
  • 1 cup
  • Frozen peas
  • ½ cup
  • Spring onions, finely sliced
  • 1/3 cup
  • Reduced fat cheddar, grated
  • ½ cup
  • Garlic, minced
  • 2 cloves
  • Self raising flour
  • 2/3 cup
  • Eggs, lightly beaten
  • 2
  • Olive oil
  • 2 tbsp.
  • Greek yoghurt
  • For serving


  1. Grate the zucchini and then using your hands squeeze out as much liquid as possible.
  2. Transfer the zucchini to a large bowl and add the carrot, cauliflower, frozen peas, spring onions, garlic and grated cheese and mix well.
  3. Sprinkle the flour over the veggies and add the beaten eggs. Mix till well combined.
  4. Season with salt and pepper
  5. Place a large fry pan over a medium heat and add the olive oil.
  6. Using a ¼ cup measure, scoop the fritter mixture into the frypan. Flatten the mounds slightly, spacing them a few centimetres apart.
  7. Cook the fritters for 2-3 minutes then flip and continue cooking for 1-2 minutes until they are golden brown and crispy.
  8. Serve with a dollop of Greek yoghurt.

Note: Fritters are a great way to use up those wilting veg in the bottom of your fridge!
