Place a saucepan onto medium heat, pour the olive into the saucepan and allow to heat for a minute. Add chopped onion and capsicum and cook until soft.
Add chicken mince and seasoning, cook until chicken changes colour.
Add the rest of the vegetables. Cook for a further 5 minutes then take of heat and leave to cool for a few minutes.
Set out strips of mountain bread. Place a spoonful of chicken/vegetable mix at the bottom of the wrap, sprinkle a little cheese on top. Carefully fold into triangle shapes.
Place triangles on tray and bake in the oven (200 degrees C) for approx. 15 mins or until golden brown.
