Fluffy banana and blueberry muffins for the perfect morning or afternoon snack.

White plain flour, sifted
170 grams
Wholemeal plain flour, sifted
85 grams
Baking Powder
3 teaspoons
Bicarb Soda
½ teaspoon
Salt
¼ teaspoon
White sugar
2 tablespoons
Brown sugar
2 tablespoons
Reduced fat milk
125 millilitres
Eggs, beaten
2
Olive oil
60 millilitres
Vanilla Essence
1 teaspoon
Banana, peeled and mashed
2 medium
Blueberries, frozen
¾ cup
Method
Preheat the oven to 180oC. Lightly spray muffin tin/s with oil or line with patty cases.
Place dry ingredients in a large bowl and stir to combine.
Make a well in the centre of the dry ingredients and add all wet ingredients. Mix with a spatula until just combined (do not overmix).
Spoon into muffin tin and cook for 15 to 20 minutes, until golden-brown and cooked through.
