Banana and Blueberry Muffins

Fluffy banana and blueberry muffins for the perfect morning or afternoon snack.

  • Wholemeal plain flour, sifted

  • Baking Powder
  • 3 tsp.
  • Bicarb Soda
  • ½ tsp.
  • Salt
  • ¼ tsp.
  • White sugar
  • 2 tbsp.
  • Brown sugar
  • 2 tbsp.
  • Reduced fat milk
  • 125ml
  • Eggs, beaten
  • 2
  • Olive oil
  • 60ml
  • Vanilla Essence
  • 1 tsp.
  • Banana, peeled and mashed
  • 2
  • Blueberries, frozen
  • ¾ cup

Method

  1. Preheat the oven to 180oC. Lightly spray muffin tin/s with oil or line with patty cases.
  2. Place dry ingredients in a large bowl and stir to combine.
  3. Make a well in the centre of the dry ingredients and add all wet ingredients. Mix with a spatula until just combined (do not overmix).
  4. Spoon into muffin tin and cook for 15 to 20 minutes, until golden-brown and cooked through.
