Family-friendly, curried chicken sausages with carrots, celery and peas in a mild curry sauce, served with fluffy white rice. Ready in 30 minutes.

Curried sausages with rice

  • 350g
  • Canola oil
  • 1 tbsp
  • Onion
  • 1 medium diced
  • Garlic cloves
  • 1-2 peeled and crushed
  • Carrots
  • 1-2 diced
  • Celery stalks
  • 1-2 diced
  • Frozen peas
  • ¾ cup
  • Curry powder
  • ½ tbsp
  • Cornflour
  • 5 tsp
  • Reduced salt chicken-style stock powder
  • 1 tbsp
  • Water
  • 750mls
  • Salt and pepper
  • to taste
  • White rice
  • to serve

Method

  1. Heat half the amount of oil in a frypan to a medium heat. Place sausages into pan and fry until cooked. Remove from pan and set aside.
  2. Heat remaining oil in a large saucepan. Add the diced onion and cook gently until soft and translucent. Add the garlic and stir well.
  3. Add the curry powder and cook for 30 seconds.
  4. Set aside half a cup of the water. Mix the stock powder with remaining water.
  5. Add the stock, celery and carrots and stir well. Simmer for 15 minutes or until soft.
  6. Add peas and bring back to a boil.
  7. Mix the half a cup of water with the cornflour and slowly pour into the saucepan, whisking continuously while bringing back to the boil.
  8. Using a sharp knife cut the sausages into small chunks and add into the sauce. Simmer for 5-10 minutes. If the mixture is too thick, thin with water.
  9. Cook the rice according to the packet instructions in a saucepan or in a rice cooker.
  10. Spoon curried sausages over rice to serve.

With rice. Note: You can make your own chicken mince by placing 1 kilogram of chicken thigh fillets into a food processor and blitzing until it resembles a mince texture.
