Tender beef meatballs packed with carrot and zucchini, served with pasta in a smooth tomato and herb sauce and topped with grated cheese.

Method

  1. If cooking the meatballs in the oven, line an oven tray and preheat the oven to
  2. 180°C.
  3. Place mince, grated carrot, zucchini, mixed herbs and bread crumbs into a
  4. large bowl and mix well to combine.
  5. Wet your hands, then form the mixture into small meatballs. Place the balls on a lined oven tray and cook in the oven until browned, approximately 15 mins. Alternatively, a small ice cream scoop is a great way to measure out your mix then roll the balls firmly into shape.
  6. Put the saucepan over medium heat and add enough oil to coat the bottom of the pan. Add the onion, garlic, and grated vegetables and fry for 5 mins or until soft.
  7. Add crushed tomato, water, sugar, stock powder and herbs. Bring the sauce to a simmer and cook for 30 minutes to 2 hours. Cool slightly and then blend with
  8. the stick blender until smooth. Check seasoning.
  9. Bring a large pot of water to the boil. Cook the pasta until tender and al dente. Drain pasta, serve topped with meatballs and sauce. Top with cheese.

*Use fresh herbs if you have them available, but if not, dried are fine. Basil, oregano and thyme are great options.
